The heat of the summer is here and the watermelon is abundant. So why not make a sweet, healthier twist on the high-fat ice cream treats we all love this time of year? Enjoy this recipe...


Watermelon-Berry Sorbet


½ cup sugar

1 cup water

2 cups seeded watermelon cubes

2 cups fresh berries

(strawberries and raspberries will give you a reddish-pinkish dessert

and blueberries and blackberries will create a purple dessert)


Step 1

In a medium saucepan combine water and sugar; bring to boil, stirring frequently. Boil uncovered, for 2 minutes. Remove from heat and cool slightly.


Step 2

Place the watermelon and berries in a blender or large food processor; cover and blend for 30 seconds. Add the warm syrup and blend until almost smooth. Transfer the mixture to a 3-quart rectangular baking dish or a 13x9x2-inch baking pan. Place in the freezer, uncovered, for 1-½ to 2-½ hours or until almost solid.


Step 3

Break up slightly and scoop into shallow bowls. You can top with a sprinkle of fresh berries and a sprig of mint or lemon balm.
