Feel like a treat?

It just feels like a day for some healthy treats! Actually, when DOESN'T it feel like a good day for healthy treats?!?! :)


Try these easy to make energy bites! They take just a few minutes to mix together and voila... you've hit the spot with this perfect little ball of goodness! Enjoy!

EASY ENERGY BITES


Ingredients:

  • 1 ¼ c old fashioned oats

  • ⅓ c sweetened shredded coconut

  • ½ c creamy peanut butter

  • ¼ c honey

  • 2 T mini chocolate chips

  • 1 t vanilla

  • ⅛ teaspoon salt

  • 2 oz. dark chocolate bar or extra chocolate chips, optional


Instructions:

  1. Combine all ingredients, except dark chocolate bar, in large bowl.

  2. Stir well until ingredients are all combined.

  3. Scoop dough by 2 teaspoon scoops and roll between palms to form a smooth ball.

  4. Transfer to a wax paper lined baking sheet.

  5. Place in freezer for 10 minutes.

  6. While energy bites are chilling, melt dark chocolate by breaking into small pieces, placing in a small microwave-safe bowl, and heating for 15-second increments and stirring in between until chocolate is completely melted.

  7. Remove chilled energy bites from freezer and drizzle melted dark chocolate over top.

  8. Place in refrigerator and chill one hour before serving. (optional- you don't have to chill, but be aware that the dough will be stickier)

  9. Store in the refrigerator in an airtight container.

There you have it! Easy and healthy... and will make your sweet tooth happy, too!
