Magic Green Sauce

I'm a big fan of Psych, a witty TV show about Shawn, a fake psychic detective, and his best friend, Gus. There are a lot of recurring lines and running gags throughout the series. One of those lines is, "Are you a fan of delicious flavor?" Shawn and Gus are definitely led by their stomachs.

But honestly, who ISN'T a fan of delicious flavor? That's why I'm sharing this recipe for Magic Green Sauce. Our front desk staffer, Kit, is actually the one who turned me onto this stuff a while back. We dipped crackers and pretzels in it, but it's also delicious on steak, grilled chicken, salmon... you get the idea. I love eating it with baby carrots.


Why "Magic?" Because this stuff can transform a boring piece of meat into the most delicious steak you've ever had! Magic Green Sauce is full of fresh, healthy ingredients, so you can feel good about eating it! Even, better, you can whip it up in a matter of minutes. The original recipe comes from Pinch of Yum. It's perfect for a summer day when you want something refreshing.



Here comes the delicious flavor:

  • 1 avocado

  • 1 cup packed parsley and cilantro leaves (combined)

  • 1 jalapeño, ribs and seeds removed

  • 2 cloves garlic

  • juice of one lime (or two – get lots of limey goodness in there!)

  • 1/2 cup water

  • 1/2 cup olive oil

  • 1 teaspoon salt

  • 1/2 cup pistachios (you can sub other nuts)


Pulse all ingredients – except pistachios – in a food processor until incorporated.


Add pistachios and pulse until mostly smooth (depends on what consistency you want).


Serve as a dip, spread, or sauce — or add additional water or oil to thin the sauce for use as a dressing or a marinade.


You can adjust other things like the jalapeño and garlic to your liking. Be sure to use olive oil and NOT extra virgin olive oil as this will greatly change the flavor (I might be speaking from experience).


Go ahead and whip some up today and enjoy it while you watch your favorite episode of Psych!
