How about something yummy tonight? Here's a healthy recipe that will be ready to eat in less than an hour!
SALMON WITH BROCCOLI AND SWEET POTATOES
3 T low-fat mayonnaise
1 tsp chili powder
2 sweet potatoes, peeled and cut into 1 inch pieces
4 t olive oil, divided
1/2 t salt, divided
1/4 t pepper, divided
4 cups broccoli florets
1 1/4 lbs. salmon filet, cut into 4 portions
1 lime, zested and juiced
1/4 c crumbled feta cheese
1/2 c chopped fresh cilantro
Preheat oven to 425 degrees Fahrenheit. Line a baking sheet with foil and coat with cooking spray.
Combine mayo and chili powder in a small bowl and set aside.
Toss sweet potatoes with 2 tsp oil, 1/4 t salt, and 1/4 t pepper in a medium bowl. Spread on the prepared baking sheet. Roast for 15 minutes in oven.
Meanwhile, toss broccoli with the remaining 2 teaspoons oil, 1/4 t salt, and 1/4 t pepper. Remove the baking sheet from the oven. Stir the sweet potatoes and move them to the side of the pan. Add the broccoli to the other side, leaving a space in the middle of the pan. Arrange salmon in the middle and spread 2 T of the mayo mixture on top of the salmon.
Bake until salmon flakes off easily with a fork, about 15 minutes.
Meanwhile, add lime zest and lime juice to the remaining 1 T mayonnaise. Mix well.
Plate the salmon and vegetables and top with remaining mayo mixture, feta cheese and cilantro.
