Healthy AND Yummy!

How about something yummy tonight? Here's a healthy recipe that will be ready to eat in less than an hour!


3 T low-fat mayonnaise

1 tsp chili powder

2 sweet potatoes, peeled and cut into 1 inch pieces

4 t olive oil, divided

1/2 t salt, divided

1/4 t pepper, divided

4 cups broccoli florets

1 1/4 lbs. salmon filet, cut into 4 portions

1 lime, zested and juiced

1/4 c crumbled feta cheese

1/2 c chopped fresh cilantro

  • Preheat oven to 425 degrees Fahrenheit. Line a baking sheet with foil and coat with cooking spray.

  • Combine mayo and chili powder in a small bowl and set aside.

  • Toss sweet potatoes with 2 tsp oil, 1/4 t salt, and 1/4 t pepper in a medium bowl. Spread on the prepared baking sheet. Roast for 15 minutes in oven.

  • Meanwhile, toss broccoli with the remaining 2 teaspoons oil, 1/4 t salt, and 1/4 t pepper. Remove the baking sheet from the oven. Stir the sweet potatoes and move them to the side of the pan. Add the broccoli to the other side, leaving a space in the middle of the pan. Arrange salmon in the middle and spread 2 T of the mayo mixture on top of the salmon.

  • Bake until salmon flakes off easily with a fork, about 15 minutes.

  • Meanwhile, add lime zest and lime juice to the remaining 1 T mayonnaise. Mix well.

  • Plate the salmon and vegetables and top with remaining mayo mixture, feta cheese and cilantro.

Staying healthy includes eating healthy and this is the perfect dish to keep us on the right track.
